Vinkeles, the restaurant
An exclusive restaurant that is situated in The Dylan Hotel Amsterdam. Formerly the bakery of the Roman Catholic Old and Poor People's Office; which was set up in 1787 by the Regents, who then owned the building. The bakery flourished until 1811 and guests still can see the original ovens, which were discovered intact during restoration work.
Echoing the décor of the hotel, Executive Chef Dennis Kuipers' menu combines the traditional and the modern. The dishes served in the popular Vinkeles show Kuipers' love of the contemporary French cuisine. He combines the freshest ingredients to produce a menu that is delicious and unique to Vinkeles. His signature dishes include Roast Anjou pigeon with five spices and Mousse of bitter Caraïbe chocolate and coffee couscous with marinated mango and a mascarpone sorbet.
Who wants to dine exclusively, will be expected in the intimate athmosphere of The Dylan, where Traditional French meets Modern North Africa: from grilled lobster with muscat pumpkin mousse, pistachio pesto & orange tuiles to Beef entrecĂ´te au gratin with bone marrow & smoked garlic served with polenta & marinated button mushrooms.
Vinkeles is situated at one of the most beautiful canals of Amsterdam, the Keizersgracht.
